Here is what you need

  • YOU NEED:
  • 1 3/4 Cups flour or cake flour

  • ¾ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ¼  teaspoon salt (optional)

  • ½ Cup (1 stick) butter, room temperature

  • 1 Cup granulated sugar

  • 3 eggs (egg whites only)

  • 2 teaspoons pure vanilla extract

  • ½ Cup sour cream or yogurt

  • ½ Cup milk

  • Tub of vanilla frosting or pre-made buttercream frosting

How to Make:

Makes 12 cupcakes 

  1. In a bowl, whisk together flour, baking powder, baking soda, and salt together. Set aside.
  2. In a large bowl, using a mixer, beat the butter until smooth. Mix in sugar and beat until creamy.  Add vanilla extract.
  3. Separate the egg yolks and egg whites. Mix in only egg whites to the sugar bowl.  
  4. Mix in flour mixture ½ cup at a time. Mix in sour cream and milk.  
  5. Scoop batter 2/3 full into cupcake liners. Bake for 20 minutes. Let cool before decorating.
