Yummy Vanilla Cupcakes

Ingredients
- 1 3/4 Cups flour or cake flour¾ teaspoon baking powder¼ teaspoon baking soda¼ teaspoon salt (optional)½Cup (1 stick) butter, room temperature
- 3/4 tsp baking powder
- 1/4 tsp baking soda
- 1/2 Cup 1 stick butter - room temperature
- 1 Cup granulated sugar
- 3 large eggs - (egg whites only)
- 2 tsps pure vanilla extract
- 1/2 Cup sour cream or yogurt
- 1/2 Cup milk
Instructions
- In a bowl, whisk together flour, baking powder,baking soda, and salt together. Set aside.
- Ina large bowl, using a mixer, beat the butter until smooth. Mix in sugar andbeat until creamy. Add vanilla extract.
- Separate the egg yolks and egg whites. Mix in only egg whites to the sugar bowl.
- Mix in flour mixture ½ cup at a time. Mix in sour cream and milk.
- Scoop batter 2/3 full into cupcake liners. Bake for 20minutes. Let cool before decorating.
