Yummy Vanilla Cupcakes

Ingredients
  

  • 1 3/4 Cups flour or cake flour¾ teaspoon baking powder¼ teaspoon baking soda¼  teaspoon salt (optional)½Cup (1 stick) butter, room temperature
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 Cup 1 stick butter - room temperature
  • 1 Cup granulated sugar
  • 3 large eggs - (egg whites only)
  • 2 tsps pure vanilla extract
  • 1/2 Cup sour cream or yogurt
  • 1/2 Cup milk

Instructions
 

  • In a bowl, whisk together flour, baking powder,baking soda, and salt together. Set aside.
  • Ina large bowl, using a mixer, beat the butter until smooth. Mix in sugar andbeat until creamy.  Add vanilla extract.
  • Separate the egg yolks and egg whites. Mix in only egg whites to the sugar bowl.  
  • Mix in flour mixture ½ cup at a time. Mix in sour cream and milk.  
  • Scoop batter 2/3 full into cupcake liners. Bake for 20minutes. Let cool before decorating.
