Also called Mexican Wedding cookies, these buttery moist cookies look just like snowballs.
Kids will love mixing and rolling these cookies.
Note: if you want to omit the pecans, you can add mini chocolate chips.

Here is what you need
Preheat oven to 325 F
- 2 sticks (1 cup) butter (room temperature)
- 1/2 Cup sugar
- 1 tablespoon pure vanilla extract
- 2 Cups all-purpose flour
- 1/2 teaspoon salt
- 2/3 Cup chopped pecans
- 1 cup powdered sugar (to roll)
Optional – add mini chocolate chips instead of pecans.

Makes 20 snowballs.
Preheat oven 325 F
- In bowl, beat butter and sugar until creamy.
- Add vanilla.
- Slowly mix in flour and salt.
- Add chopped pecans and mix.
- Roll into 1-inch balls. Place on a tray. Refrigerate for 30 minutes
- Place cooled snowballs onto a baking sheet lined with parchment paper.
- Bake at 325 F for 12 minutes.
- Cool to warm. Roll in powdered sugar.
