Snowball Cookies

These are also called Mexican Wedding Cookies

Ingredients
  

  • 1 Cup butter (2 sticks) room temperature
  • 1/2 Cup sugar
  • 1 tbsp pure vanilla extract
  • 2 Cups all-purpose flour
  • 1/2 tsp salt
  • 2/3 Cup pecans -chopped
  • 1 Cup powdered sugar

Instructions
 

  • Preheat oven 325 F 
    In bowl, beat butter and sugar until creamy. 
    Add vanilla.
    Slowly mix in flour and salt.
    Add chopped pecans and mix.
    Roll into 1-inch balls. Place on a tray.
    Refrigerate for 30 minutes
    Place cooled snowballs onto a baking sheet lined with parchment paper.
    Bake at 325 F for 12 minutes.
    Cool to warm.
    Roll in powdered sugar.
