There is nothing better than homemade pancakes on a cold Fall or Winter morning. But truthfully, these are great for dinner too.

Have you heard of Pumpkin Spice spice. It’s found in the spice section or you can use the individual spices listed. And if you don’t have all those spices, you can just add cinnamon.

The pumpkin needs to be the puree, not the pumpkin pie mix. They look very much alike in the store, so be sure to choose the 100% pumpkin puree.

Top your pancakes with maple syrup, honey, whipped cream, or pecan pieces.

Kids will love making these in their PJ’s. Do be careful with kids near the hot griddle or pan.

Here is what you need

  • You Need:
  • 1 1/2 Cups all-purpose flour
  • 1/4 Cup brown sugar
  • 2 tbsp baking powder
  • 2 tsp of pumpkin spice or (1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves, 1/2 tsp allspice)
  • 2/3 Cup pumpkin puree
  • 1 1/2 Cups buttermilk or milk
  • 2 eggs
  • 3 tbsp veg. or canola oil
  • Extra oil for frying pancakes
How to Make:

Make 10 – 15 pancakes

  1. In a bowl, mix flour, brown sugar, baking powder, and spices together.
  2. In another bowl, mix pumpkin puree, milk, eggs, and oil together. Add to flour mixture.
  3. On a hot griddle or pan, spread a thin layer of oil.
