Got ripe bananas? Really ripe bananas!

They make best banana muffins. I always buy extra bananas and let them get very ripe to create banana bread or muffins.

Todays recipe is a moist banana muffin with chocolate chips. Of course, you can omit the chocolate chips.

You can substitute the flour with gluten-free flour.

It is a perfect recipe for a kids snack, breakfast or even a yummy dessert.

To create the most flavor is to use the ripest bananas. Bananas are the sweetest when they are very ripe.

Here is what you need

You Need:

  • 3-4 ripe bananas
  • 2 large eggs
  • 1/2 Cup butter (1 stick) room temperature
  • 1 Cup granulated sugar
  • 1/2 Cup brown sugar
  • 3/4 Cup milk or sour cream
  • 2 Cups flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt (optional)
  • 1 Cup chocolate chips
How to Make:
  • Step 1: Mash bananas in bowl – set aside
  • Step 2: Mix eggs, butter, sugar, and brown sugar. Stir in milk.
  • Step 3: In seperate bowl, mix together flour, baking soda, baking powder, and salt. Add in chocolate chip. Mix.
  • Step 4: Add mashed bananas and mix.
  • Step 5: Scoop into cupcake pan. If not using cupcake liners, do oil pan with butter, oil, or non-stick spray.
  • Step 7: Bake in preheated 350 F oven for 20-25 minutes. Check for doneness with toothpick or knife. Enjoy!
