This a dump-and-bake dinner.

A great recipe for kids to learn how rice will absorb all the water while baking. 

You can make it in 10 minutes, then bake for 1 hour and dinner is ready for the entire family.

We call it Aloha Chicken and Rice as this is a dish you would see on a Hawaiian vacation at a luau. It’s pineapple from the islands, rice from the rice fields, chicken and the Hawaiian sauces. 

Aloha is the Hawaiian word for love, affection, peace, compassion and mercy. It is common to have someone greet you with “Aloha” as a way to say hello and welcome. Native Hawaiians have a deeper cultural and spiritual significance as it defines a force that holds together existence.

Here is what you need

  • 1 pound boneless chicken breasts or thighs – cut into pieces
  • Sweet & Sour Sauce (12 oz.)
  • 1 Cup long grain rice (uncooked)
  • 1 Can pineapple tidbits (with juice)
  • 1 onion diced or 1 bag frozen onions
  • 1 red bell pepper (diced)
  • 1/2 Cup water or chicken broth
Pre-heat oven to 425 F. 
You will need 9 x 13 inch casserole dish and foil. 
In casserole dish add sweet and sour sauce, 1/2 cup water or chicken broth, and juice of pineapple can. Stir.
Pour rice over the sauce. Add diced onion and bell peppers. Add pineapple tidbits. Stir.
Lay boneless chicken pieces over the the sauce, rice, pineapple and veggies. 
Cover the casserole dish tightly with foil. This will help the rice cook in liquid. 
Bake for 1 hour. Serve.

Ingredients

  • 1 Cup long-grain uncooked rice
  • 1 can pineapple tidbits (you need the juice)
  • 1 large onion (diced)or bag of frozen diced onions
  • 1 large red bell pepper (optional)
  • 1/2 Cup water or chicken broth

Instructions
 

  • Pre-heat oven to 425 F.
