Don’t you love summer fruit? Peaches, plums, nectarines, apricots, mangos, guavas, passion fruit, berries and so much more.

The best part is using these summer fruits to make delicious recipes. One of the favorites is fruit pastries.

Using puff pastry, you already have pre-made crust (buy in the frozen section). Just thaw and bake. 

Let’s make individual peach puff pastry bars. 

These are rustic and casual tarts. Just cut the pastry into squares and add a few ingredients – and a quick bake.

You don’t have to peel the fruit, just set the slices atop the puff pastry. 

When buy puff pastry, the all-butter dough is the best. Without the butter the pastry will not be as delicious. 

Your kids will love making these puff pastry squares – fun to cut the peaches with a safety knife, layering on the dough. 

How to work with Puff Pastry:

To use frozen puff pastry, thaw it in the refrigerator one day ahead of time or thaw at room temperature for a few hours. Just be careful that the dough doesn’t get too warm so that it doesn’t unroll easily. 

Unfold the thawed, but still cold, dough and lightly roll it on a floured work surface to even out gaps where the folds were. 

Cut it into squares using a pizza cutter or knife. Refrigerate until you are ready to fill and bake the tarts.

Peach pastry

Here is what you need

  • 1 sheet puff pastry (frozen)
  • 1 egg
  • 2 ripe peaches
  • 2 Tablespoons sugar
  • 1 Tablespoon flour
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/4 Cup slice almonds

Glaze (optional)

  • 1/2 Cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 Tablespoon milk
Pre-heat oven to 400 F. 
Thaw puff pastry in the fridge or at room temperature for 20 minutes. Keep dough cold. 
1. Roll out cold puff pastry on a floured board. Using a pizza cutter or knife, cut into squares.
2. Lay squares on baking sheet, lined with parchment paper.
3. In a small bowl, beat egg. Set aside.
4. With a safety knife, slice peaches into thin slices. Keep skin on.
5. Ina bowl, mix sliced peaches, sugar, flour, cinnamon, and vanilla.
6. Take a four slices of peaches and lay on top of each dough squares.
7. With a pastry brush, brush egg on edges of puff pastry.
8. Sprinkle sliced almonds on top.
Bake for 17-19 minutes.
Let cool.
To make glaze, mix the ingredients together. With a fork, spread over the puff pastry. 
Enjoy!

  • 2 tbsp sugar

  • 1/4 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1/4 Cup sliced almonds
  • Glaze: 1/2 Cup powdered sugar, 1/2 tsp vanilla extract, 1 tbsp milk - mix together
