1 poundboneless chicken breasts or thighs (cut into pieces)
1jarsweet and sour sauce (12 oz.)
1Cuplong-grain uncooked rice
1canpineapple tidbits (you need the juice)
1largeonion (diced)or bag of frozen diced onions
1largered bell pepper (optional)
1/2Cupwater or chicken broth
Instructions
Pre-heat oven to 425 F. You will need 9 x 13 inch casserole dish and foil. 1. In casserole dish add sweet and sour sauce, 1/2 cup water or chicken broth, and juice of pineapple can. Stir.2. Pour rice over the sauce. Add diced onion and bell peppers. Add pineapple tidbits. Stir.3. Lay boneless chicken pieces over the the sauce, rice, pineapple and veggies. 4. Cover the casserole dish tightly with foil. This will help the rice cook in liquid. 5. Bake for 1 hour. Serve.
