Aloha Chicken and Rice

A dump-and-bake easy dinner for the whole family.

Equipment

  • 9 x 13 casserole dish
  • Foil

Ingredients
  

  • 1 pound boneless chicken breasts or thighs (cut into pieces)
  • 1 jar sweet and sour sauce (12 oz.)
  • 1 Cup long-grain uncooked rice
  • 1 can pineapple tidbits (you need the juice)
  • 1 large onion (diced)or bag of frozen diced onions
  • 1 large red bell pepper (optional)
  • 1/2 Cup water or chicken broth

Instructions
 

  • Pre-heat oven to 425 F. 
    You will need 9 x 13 inch casserole dish and foil. 
    1. In casserole dish add sweet and sour sauce, 1/2 cup water or chicken broth, and juice of pineapple can. Stir.
    2. Pour rice over the sauce. Add diced onion and bell peppers. Add pineapple tidbits. Stir.
    3. Lay boneless chicken pieces over the the sauce, rice, pineapple and veggies. 
    4. Cover the casserole dish tightly with foil. This will help the rice cook in liquid. 
    5. Bake for 1 hour. Serve.
