Summer squash is so delicious – why not make it a sweet and nutritious bread for breakfast or snack.

A favorite squash is zucchini, with it’s bright green color and flavor. 

We substitute applesauce for 1/2 the oil to give it more flavor and less calories. 

You can add different spices like all-spice, nutmeg, cardamom,  ginger, etc. Just add 1/2 a teaspoon to the dry ingredients.

Here is what you need

  • 2 medium size zucchini
  • 3/4 Cup roasted walnuts or chocolate chips
  • 2 Cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp all-spice (optional)
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 eggs – room temperature
  • 1 Cup brown sugar
  • 1/2 Cup sugar
  • 1/2 Cup applesauce
  • 1/2 Cup canola oil 
  • 1 tsp pure vanilla extract (optional)

Pre-heat oven to 350 F. 

Line a loaf pan with parchment paper or oil pan. 

This is a 3 bowl method

  • In first bowl, grate 2 cups of zucchini.
  • In second bowl, mix together flour, salt, cinnamon, spice, baking soda, baking powder.
  • In third bowl, mix together eggs, sugars, applesauce, oil and vanilla. 
  • Add all three bowls together. Fold and carefully mix – do not over mix.
  • Fold in nuts or chocolate chips. 
  • Pour into loaf pan.
  • Bake in pre-heated oven for 1 hour.
