Pre-heat oven to 350 F. Line loaf pan with parchment paper or oil. This is a 3 bowl methodIn first bowl, grate 2 cups of zucchini.In second bowl, mix together flour, salt, cinnamon, spice, baking soda, baking powder.In third bowl, mix together eggs, sugars, applesauce, oil and vanilla. Add all three bowls together. Fold and carefully mix - do not over mix.Fold in nuts or chocolate chips. Pour into loaf pan.Bake in pre-heated oven for 1 hour.
