Yummy Zucchini Bread

Ingredients
  

  • 2 medium zucchini (to make 2 cups grated)
  • 3/4 Cup chopped walnuts or chocolate chips
  • 2 Cups all-purpose flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp all-spice (optiona)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 large eggs
  • 1 Cup brown sugar
  • 1/2 Cup sugar
  • 1/2 Cup applesauce
  • 1/2 Cup canola or vegetable oil
  • 1 tbsp pure vanilla extract (optional)

Instructions
 

  • Pre-heat oven to 350 F. 
    Line loaf pan with parchment paper or oil.
    This is a 3 bowl method
    In first bowl, grate 2 cups of zucchini.
    In second bowl, mix together flour, salt, cinnamon, spice, baking soda, baking powder.
    In third bowl, mix together eggs, sugars, applesauce, oil and vanilla. 
    Add all three bowls together. Fold and carefully mix - do not over mix.
    Fold in nuts or chocolate chips. 
    Pour into loaf pan.
    Bake in pre-heated oven for 1 hour.
