On a chilly day, these snowball cookies will warm your heart and tummy.

Also called Mexican Wedding cookies, these buttery moist cookies look just like snowballs.

Kids will love mixing and rolling these cookies. 

Note: if you want to omit the pecans, you can add mini chocolate chips.

Here is what you need

Preheat oven to 325 F 

  • 2 sticks (1 cup) butter (room temperature)
  • 1/2 Cup sugar
  • 1 tablespoon pure vanilla extract
  • 2 Cups all-purpose flour
  • 1/2 teaspoon salt
  • 2/3 Cup chopped pecans
  • 1 cup powdered sugar (to roll)

Optional – add mini chocolate chips instead of pecans.

How to Make:

Makes 20 snowballs.

Preheat oven 325 F 

  1. In bowl, beat butter and sugar until creamy. 
  2. Add vanilla.
  3. Slowly mix in flour and salt.
  4. Add chopped pecans and mix.
  5. Roll into 1-inch balls. Place on a tray. Refrigerate for 30 minutes
  6. Place cooled snowballs onto a baking sheet lined with parchment paper.
  7. Bake at 325 F for 12 minutes.
  8. Cool to warm. Roll in powdered sugar.
