It’s lemon season. 

Let’s make a new spring twist on brownies.

The harvest is grand this year so take advantage of freshly squeezed lemons.

The zest of a lemon peel gives a tart taste to the sweetness of your recipes.

It’s a simple recipe that kids will love making. 

Teaching kids about zesting. Zest is the grated rind of a lemon or orange.

Hint: When zesting your lemon peel, only zest the yellow part, not the white part. The white part has a bitter taste.

Lemon Brownies Ingred

Here is what you need

  • 1 Cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 Cup sugar
  • 1 large lemon
  • 2 large eggs
  • 1/4 Cup lemon or vanilla yogurt or sour cream
  • 1 teaspoon pure vanilla extract
  • 3 Tablespoons vegetable or canola oil
  • Powdered sugar to sprinkle on top

You will need a 8 x 8 pan

How to Make:

Make 8 – 12 brownies

  1. Preheat oven to 350 F (170 C)
  2. Grease 8×8 pan with butter or line with parchment paper.
  3. In a large bowl, mix together flour, salt and baking soda.
  4. Mix in sugar and zest of one lemon peel.
  5. Make a well in middle. Add in eggs, yogurt, vanilla and oil. Stir well.
  6. Add in juice of a lemon.
  7. Pour batter into pan.
  8. Bake for 20 minutes.
  9. Cool. Cut into squares.
  10. Using a strainer or shaker, sprinkle powdered sugar over tops of brownies.
