Fresh Lemon Brownies

Equipment

  • 8 x 8 baking pan
  • Parchment paper

Ingredients
  

  • 1 Cup all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 3/4 Cup sugar
  • 1 large lemon
  • 2 large eggs
  • 1/4 Cup lemon or vanilla yogurt or sour cream
  • 1 tsp pure vanilla extract
  • 3 tbsp canola or vegetable oil

Instructions
 

  • Make 8 - 12 brownies
    Preheat oven to 350 F (170 C)
    Grease 8×8 pan with butter or line with parchment paper.
    In a large bowl, mix together flour, salt and baking soda.
    Mix in sugar and zest of one lemon peel.
    Make a well in middle.
    Add in eggs, yogurt, vanilla and oil. Stir well.
    Add in juice of lemon.
    Pour batter into pan.
    Bake for 20 minutes.
    Cool.
    Cut into squares.
    Using a strainer or shaker, sprinkle powdered sugar over tops of brownies.
