Irish Soda Bread

Start the day with a slice of Irish Soda Bread. 

It is a surprise to people when they find out there is no yeast in the dough.

How you get the fluffy delicious bread is through the chemical reaction of the buttermilk and baking soda. 

It creates a rise that makes a delicious dense bread with moisture inside.

The trick is getting the dough into the preheated oven after mixing, so the chemical reaction continues.

What you need:

  • 1 3/4 Cups buttermilk or (add 2 Tbsp. white vinegar to milk – let sit for 10 minutes)
  • 1 large egg
  • 4 3/4 Cups all-purpose flour
  • 1/4 Cup sugar + 1/4 Cup sugar for topping
  • 1 teaspoon baking soda
  • 1 teaspoon salt (optional)
  • 1/2 Cup butter (1 stick) cold butter – cubed
  • 1 Cup raisins

Ingredients
  

  • 1 3/4 Cups buttermilk or (add 2 Tbsp. white vinegar to milk - let sit for 10 minutes)
  • 1 large egg
  • 4 3/4 Cups all-purpose flour
  • 1/2 Cup 1/4 Cup sugar for recipe + 1/4 Cup sugar for topping
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 Cup butter (1 stick cold butter)
  • 1 Cup raisins

Instructions
 

  • In a bowl, whisk together buttermilk and egg. Set aside
  • In another bowl, whisk together flour, sugar, baking soda, and salt.
  • Mix in cubed cold butter. Use hands or pastry cutter to make small pea sized butter pieces. Fold in raisins.
  • Stir in buttermilk mixture to the flour mixture. It will be sticky. Add flour to your hands to form dough into a round circle.
  • Place your round dough in well-greased pan.Score with knife to make a large X. Sprinkle ¼ Cup sugar over top.
  • Bake in lower rack of oven for 45 minutes. Serve warm. Keep covered to stay fresh.
