Irish Soda Bread

The no-yeast amazing bread

Ingredients
  

  • 1 3/4 Cups buttermilk or (add 2 Tbsp. white vinegar to milk - let sit for 10 minutes)
  • 1 large egg
  • 4 3/4 Cups all-purpose flour
  • 1/2 Cup 1/4 Cup sugar for recipe + 1/4 Cup sugar for topping
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 Cup butter (1 stick cold butter)
  • 1 Cup raisins

Instructions
 

  • In a bowl, whisk together buttermilk and egg. Set aside
  • In another bowl, whisk together flour, sugar, baking soda, and salt.
  • Mix in cubed cold butter. Use hands or pastry cutter to make small pea sized butter pieces. Fold in raisins.
  • Stir in buttermilk mixture to the flour mixture. It will be sticky. Add flour to your hands to form dough into a round circle.
  • Place your round dough in well-greased pan.Score with knife to make a large X. Sprinkle ΒΌ Cup sugar over top.
  • Bake in lower rack of oven for 45 minutes. Serve warm. Keep covered to stay fresh.
