It’s a poke bundt cake.

What’s a poke cake?

It’s a cake with holes! You poke the cake with holes. The holes are then filled with a liquid or filling — like condensed milk, caramel, pureed fruit, chocolate ganache, coconut cream, or pudding — to infuse extra flavor into every bite.

You will love this quick recipe using a yellow cake mix. The cake mix has all the ingredients of flour, sugar, baking powder, baking soda, etc.

Use store bought caramel to make it easy to pour over the cake.

Here is what you need

  • 1 box yellow cake mix
  • 3 eggs (room temperature)
  • 1 Cup pumpkin puree (not pumpkin pie mix)
  • 1 Cup milk
  • 3/4 Cup vegetable or canola oil or butter (melted)
  • 3 tsp pumpkin pie spice
  • 1 Cup caramel (homemade or store-bought)

Mix all ingredients together. Make sure the eggs have been fully mixed together. 

Pour into greased and floured bundt pan or two 8-inch pans. 

Bake in a pre-heated 350 F degrees oven. For 8-inch pans, bake 25-30 minutes. For bundt cake, bake for 40 – 45 minutes. Check for doneness. 

Cool cake. Poke holes in cake by pushing the handle of a wooden spoon into the cake. Do not go all the way through.

Pour caramel over cake making sure the caramel goes into the holes.
