Christmas Wreath Salad with Toasted Almonds

Bring the kids in the kitchen to help you make this Christmas Wreath salad.

It has beautiful holiday colors and toasted almonds to sprinkle on top. 

Using a variety of veggies and fruit, along with an orange glaze dressing, it is the perfect addition to your holiday meals.

Toasted almonds are made by baking the almonds first and then adding sugar to create a sweet nut flavor to your salad.

Here is what you need

To make almonds:

Preheat oven to 350 F 

  • 1 Cup almonds
  • 1/4 Cup sugar or honey
  • 3 Tablespoons water

To make salad:

  • 2 Cups sliced Romaine lettuce
  • 1/2 cucumber sliced
  • 1 cup mini tomatoes
  • 1 orange (sliced)
  • 1/2 Cup dried cranberries
  • 1 Cup sliced beets

To make dressing:

Mix all together.

  • 1/2 Cup olive oil
  • Juice of 1 orange
  • 1 Tablespoon balsamic or apple cider vinegar
  • 1 tablespoon sugar or 2 tablespoons honey.

Put in a jar and shake.

Optional – add more cut up veggies and fruits

How to Make:
To Toast Almonds

Preheat oven 350 F 

  1. Lay sliced almonds on a baking sheet (parchment paper optional)
  2. Bake for 10 minutes. Take out of oven.
  3. Sprinkle water over the almonds. 
  4. Sprinkle sugar or drizzle honey on top.
  5. Bake again for 10 minutes. Let cool. 

To make salad:

Cut up lettuce, extra veggies and fruit. Layer on a round plate to make a wreath. 

Add a center smaller bowl to add toasted almonds. 

Drizzle dressing over the salad.
