Got ripe bananas? Really ripe bananas!
They make best banana muffins. I always buy extra bananas and let them get very ripe to create banana bread or muffins.
Todays recipe is a moist banana muffin with chocolate chips. Of course, you can omit the chocolate chips.
You can substitute the flour with gluten-free flour.
It is a perfect recipe for a kids snack, breakfast or even a yummy dessert.
To create the most flavor is to use the ripest bananas. Bananas are the sweetest when they are very ripe.
Here is what you need
You Need:
- 3-4 ripe bananas
- 2 large eggs
- 1/2 Cup butter (1 stick) room temperature
- 1 Cup granulated sugar
- 1/2 Cup brown sugar
- 3/4 Cup milk or sour cream
- 2 Cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt (optional)
- 1 Cup chocolate chips
How to Make:
- Step 1: Mash bananas in bowl – set aside
- Step 2: Mix eggs, butter, sugar, and brown sugar. Stir in milk.
- Step 3: In seperate bowl, mix together flour, baking soda, baking powder, and salt. Add in chocolate chip. Mix.
- Step 4: Add mashed bananas and mix.
- Step 5: Scoop into cupcake pan. If not using cupcake liners, do oil pan with butter, oil, or non-stick spray.
- Step 7: Bake in preheated 350 F oven for 20-25 minutes. Check for doneness with toothpick or knife. Enjoy!

Instructions
- In a bowl, mash bananas with a fork.
- In another bowl, mix together sugars, butter, milk and eggs.
- In another bowl, mix together flour, baking soda, baking powder, salt. Mix in chocolate chips.
- Mix everything together. Scoop into lined cupcake pan (about 2/3 full).
- Bake in pre-heated 350 F for 20-25 minutes. Enjoy!
