Here is what you need
- 1⁄2 Cup (1 Stick) Butter
- 3⁄4 Cup Brown Sugar
- 1⁄2 Cup Granulated Sugar
- 1 Large Egg
- 1 Teaspoon Pure Vanilla Extract
- 1 1/2 Cups All-Purpose Flour
- 1⁄2 Teaspoon Baking Powder
- 1⁄2 Teaspoon Ground Cinnamon
- 1⁄2 Cup Raisins or chocolate chips
- 1 1/2 Cups Quick-Cooking Oatmeal
Cream butter. Add in sugars. Mix well. Add egg and mix. Add vanilla. Mix.
In another bowl, mix together flour, baking soda, and cinnamon. Add to sugar mixture.
Add raisins and oatmeal. Mix well.
Drop by spoonfuls onto baking pan (lined with parchment paper). Bake in pre-heated 350F oven for 12 minutes.
Store in airtight container. You can freeze for later up to 2 months.
