It’s lemon season.
Let’s make a new spring twist on brownies.
The harvest is grand this year so take advantage of freshly squeezed lemons.
The zest of a lemon peel gives a tart taste to the sweetness of your recipes.
It’s a simple recipe that kids will love making.
Teaching kids about zesting. Zest is the grated rind of a lemon or orange.
Hint: When zesting your lemon peel, only zest the yellow part, not the white part. The white part has a bitter taste.

Here is what you need
- 1 Cup all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 3/4 Cup sugar
- 1 large lemon
- 2 large eggs
- 1/4 Cup lemon or vanilla yogurt or sour cream
- 1 teaspoon pure vanilla extract
- 3 Tablespoons vegetable or canola oil
- Powdered sugar to sprinkle on top
You will need a 8 x 8 pan
How to Make:
Make 8 – 12 brownies
- Preheat oven to 350 F (170 C)
- Grease 8×8 pan with butter or line with parchment paper.
- In a large bowl, mix together flour, salt and baking soda.
- Mix in sugar and zest of one lemon peel.
- Make a well in middle. Add in eggs, yogurt, vanilla and oil. Stir well.
- Add in juice of a lemon.
- Pour batter into pan.
- Bake for 20 minutes.
- Cool. Cut into squares.
- Using a strainer or shaker, sprinkle powdered sugar over tops of brownies.
