The flavors of our favorite pies can be enjoyed throughout the year.

If you love pecan pie, you’ll love these easy to make Chewy Coconut Pecan.

Why are they chewy?

This recipe calls for brown sugar (which has molasses in it) other than corn syrup which is usual for making a pecan pie.

This recipe required two baking sessions. One to pre-bake the butter crust and second to bake the pecan mix on top. 

One fun part of the recipe is separating the eggs. This will be fun for kids to do. Just crack the egg and toss the yolk back and forth in the shell as the egg whites fall into a bowl.

You can serve the pecan bars cold or warm.

Here is what you need

Preheat 350 F 15 minutes before baking. 

The crust:

  • 1 1/2 cups all-purpose flour
  • 3 tablespoons sugar
  • 3/4 Cup salted butter (1 1/2 sticks) softened

Coconut Pecan Mixture

  • 3 eggs – separated
  • 2 1/2 Cups brown sugar – packed
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 1 Cup chopped pecans
  • 3/4 Cup shredded coconut

Optional:

Sprinkle powdered sugar on top when cooled.

How to Make:

You will need a 13 x 9 dish, butter before adding crust mixture.

Makes 12-14 bars

Preheat oven 350 F 

To Make Crust:

In a bowl, mix flour, soft butter and sugar until a dough.

Press dough into a buttered dish, 13 x 9 inch pan.

Bake at 350F for 14 minutes. 

Make Coconut Pecan Mixture:

  1. Separate eggs into two bowls.
  2. In egg yolk bowl, beat till mixed.
  3. In egg white bowl, beat egg whites until fluffy. 
  4. In a large bowl, using an electric mixer – beat brown sugar, vanilla, salt and egg yolks. 
  5. Add in the chopped pecans and coconut. Mix well.
  6. Fold in egg whites until mixed.
  7. Pour mixture into the baked crust.

Bake at 350F for 35 minutes.

Let firm while cooling in pan. 

Cut into squares.
