If you love Rocky Road ice cream this will be your new favorite brownie.

It’s a chocolate brownie with chocolate chips, marshmallows and peanuts. So good.

Kids will have fun mixing the brownie batter, and then making the rocky road topping, which you layer on toward the end of the baking process.

We used peanuts in our recipe, but you can substitute with any nuts (pecans, walnuts, almonds). 

We also used Dutch chocolate cocoa powder but you can substitute with dark chocolate cocoa.

REMEMBER that the cocoa we use is not hot cocoa powder which is very different. Unsweetened cocoa powder is specifically used for baking and it bitter. When added to recipes with sugar, it gives a bold chocolatey flavor.

Rocky Road Ingred

Here is what you need

Topping:

1 1/4 Cups mini marshmallows

1 Cup chocolate chips

1/2 Cup nuts

Batter:

1/2 Cup butter (1 stick)

1 Cup granulated sugar

2 large eggs

1 tsp pure vanilla extract

1/2 Cup all-purpose flour

1/2 Cup cocoa powder

1/2 tsp baking powder

How to Make:
  1. Heat oven to 350°F. Line 8 x 8 square pan with parchment paper or grease with oil or non-stick spray.
  2. In a bowl, stir together the marshmallows, chocolate chips, and nuts. Set aside.
  3. In another bowl, mix butter and sugar together. 
  4. Add eggs and extract. Stir well.
  5. Add flour, cocoa & baking powder. Stir on top of bowl to mix together. Then mix in with butter & sugar.
  6. Pour batter into pan. 
  7. Bake for 20 minutes.
  8. Carefully pull out pan and spread topping on top.
  9. Put pan back in the oven to bake another 5 minutes.
