Pumpkin Spice Pancakes

Ingredients
  

  • 1 1/2 Cups all-purpose flour
  • 1/4 Cup brown sugar
  • 2 Tbsp baking powder
  • 2 tsp pumpkin spice or (1 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp cloves, 1/2 tsp allspice)
  • 2/3 Cup Pumpkin puree
  • 1 1/2 Cups buttermilk or milk
  • 2 large eggs
  • 3 tbsp vegetable or canola oil
  • 1/4 Cup oil for frying the pancakes

Instructions
 

  • Make 10 - 15 pancakes
    In a bowl, mix flour, brown sugar, baking powder, and spices together. 
    In another bowl, mix pumpkin puree, milk, eggs, and oil together.
    Add to flour mixture.
    On a hot griddle or pan, spread a thin layer of oil.  
    Add 1/4 cup of batter (or smaller) onto hot pan.
    Watch for bubbles. Once you see bubbles pop, turn over and cook another 30-45 seconds. 
    Serve warm.
