Perfect Pumpkin Muffins

Ingredients
  

  • 1 2/3 Cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 2 large eggs
  • 1 Cup granulated sugar
  • 1/2 Cup brown sugar
  • 1/2 Cup vegetable or canola oil
  • 1 Cup canned pure pumpkin
  • 1/4 Cup sour cream
  • 1/4 Cup milk
  • 1 tsp pure vanilla extract

Instructions
 

  • Makes 16 muffins1.
    1. In a bowl, mix together flour, baking powder, baking soda, spices, and salt. 
    2. In another bowl, mix the eggs.Add in sugars. 
    3. Stir in oil and sour cream.
    4. Mix in pumpkin and milk and vanilla. 
    5. Pour into flour mixture and mix. 
    6. Scoop batter into cupcake liners - 2/3 full. 
    7. Bake at 350 degrees for 18 minutes.  Enjoy!
    Preheat oven 350 F
