Summer Peach Pastry

- 1 sheet puff pastry keep frozen until thaw to use
- 1 large egg beat well
- 2 large ripe peaches
- 2 tbsp sugar
- 1 tbsp flour
- 1/4 tsp ground cinnamon
- 1/4 tsp pure vanilla extract
- 1/4 Cup sliced almonds
- Glaze: 1/2 Cup powdered sugar, 1/2 tsp vanilla extract, 1 tbsp milk - mix together
Pre-heat oven to 400 F. Thaw puff pastry in the fridge or at room temperature for 20 minutes. Keep dough cold. 1. Roll out cold puff pastry on a floured board. Using a pizza cutter or knife, cut into squares.2. Lay squares on baking sheet, lined with parchment paper.3. In a small bowl, beat egg. Set aside.4. With a safety knife, slice peaches into thin slices. Keep skin on.5. Ina bowl, mix sliced peaches, sugar, flour, cinnamon, and vanilla.6. Take a four slices of peaches and lay on top of each dough squares.7. With a pastry brush, brush egg on edges of puff pastry.8. Sprinkle sliced almonds on top.Bake for 17-19 minutes.Let cool.To make glaze, mix the ingredients together. With a fork, spread over the puff pastry. Enjoy!
