Summer Peach Pastry

Ingredients
  

  • 1 sheet puff pastry keep frozen until thaw to use
  • 1 large egg beat well
  • 2 large ripe peaches
  • 2 tbsp sugar
  • 1 tbsp flour
  • 1/4 tsp ground cinnamon
  • 1/4 tsp pure vanilla extract
  • 1/4 Cup sliced almonds
  • Glaze: 1/2 Cup powdered sugar, 1/2 tsp vanilla extract, 1 tbsp milk - mix together

Instructions
 

  • Pre-heat oven to 400 F. 
    Thaw puff pastry in the fridge or at room temperature for 20 minutes.
    Keep dough cold. 
    1. Roll out cold puff pastry on a floured board. Using a pizza cutter or knife, cut into squares.
    2. Lay squares on baking sheet, lined with parchment paper.
    3. In a small bowl, beat egg. Set aside.
    4. With a safety knife, slice peaches into thin slices. Keep skin on.
    5. Ina bowl, mix sliced peaches, sugar, flour, cinnamon, and vanilla.
    6. Take a four slices of peaches and lay on top of each dough squares.
    7. With a pastry brush, brush egg on edges of puff pastry.
    8. Sprinkle sliced almonds on top.
    Bake for 17-19 minutes.Let cool.
    To make glaze, mix the ingredients together. With a fork, spread over the puff pastry. Enjoy!
