How to Make Brown Butter:In a pan, on medium heat, melt cold butter. Stir and watch as the butter becomes a brown color. You will notice it bubbles first and then turn brown. Take off heat. Let cool and then refrigerate until solid again.Make Cookies:In a bowl, beat the butter until smooth.Mix butter in with brown sugar.Beat in molassesAdd in 1 egg and 1 egg yolk. Mix well.In a new bowl, mix flour, baking soda, spices and salt.Add flour mixture one cup at a time to sugar mixture until all mixed.Chill dough for at least 30 minutes.Roll dough balls into sugar. Place on cookie sheet with parchment paper.Bake at 350 F for 12 minutes.
