Brown Butter Molasses Cookies

Ingredients
  

  • 1 Cup butter (2 sticks)
  • 1 Cup brown sugar
  • 2 large eggs
  • 1/2 Cup sugar (for rolling in dough)
  • 2 1/2 Cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp Each of ground ginger, ground cloves, & ground nutmeg (optional on all)
  • 1/2 tsp salt

Instructions
 

  • How to Make Brown Butter:
    In a pan, on medium heat, melt cold butter. Stir and watch as the butter becomes a brown color. You will notice it bubbles first and then turn brown. Take off heat. Let cool and then refrigerate until solid again.
    Make Cookies:
    In a bowl, beat the butter until smooth.
    Mix butter in with brown sugar.
    Beat in molasses
    Add in 1 egg and 1 egg yolk. Mix well.
    In a new bowl, mix flour, baking soda, spices and salt.
    Add flour mixture one cup at a time to sugar mixture until all mixed.
    Chill dough for at least 30 minutes.
    Roll dough balls into sugar.
    Place on cookie sheet with parchment paper.
    Bake at 350 F for 12 minutes.
