Dutch Apple Cake

Equipment

  • 8 or 9 inch round pan

Ingredients
  

  • 1 Cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 Cup butter (1 stick) - room temperature
  • 2/3 Cup granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • 1 tsp pure almond extract (optional)
  • 2 large Granny Smith Apples (cored, peeled, diced)
  • 2 tbsps powdered sugar (for topping)

Instructions
 

  • 1. Preheat the oven to 350°F Grease a 9-inch springform or regular cake pan with butter or nonstick cooking spray or parchment paper.
    2. In a small bowl, whisk together the flour, baking powder and salt.
    3. In a bowl, cream the butter and granulated sugar until light and fluffy (use hand mixer).
    4. Add the eggs, one at a time, beating well. Beat in the vanilla and almond extract. Don't worry if the batter looks grainy at this point; that's okay.
    5. Add the flour mixture and mix until just combined. Using a rubber spatula, fold in the chopped apples.Scrape the batter into the prepared pan and even the top.
    6. Sprinkle evenly with 1 tablespoon of granulated sugar.
    7. Bake for about 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
    Sprinkle with powdered sugar. Cake can be served warm or room temperature, plain or with lightly sweetened whipped cream or vanilla ice cream.
