Strawberry Lemon Blondies

Ingredients
  

  • 1/2 Cup butter (1 stick)
  • 1 Cup brown sugar
  • 1/2 Cup granulated sugar
  • 2 large eggs
  • 2 tsps pure vanilla extract
  • 1 large Lemon (optional)
  • 1 1/2 Cups all-purpose flour
  • 1/2 tsp baking powder
  • 1 1/2 Cups white chocolate chips (12 oz.)
  • 1/2 Cup sliced almonds
  • 1/2 Cup strawberry jam

Instructions
 

  • 1.  Preheat the oven to 350 degrees F. Line an 9 x 13 inch baking pan with parchment paper.
    2.  In a microwave safe bowl, melt butter and brown sugar for 1 minute. Let cool until warm. Stir in sugar and vanilla. Add juice of one lemon (optional). Let cool slightly. Add in eggs.
    3.  In a large bowl, whisk the flour and baking powder. Stir into the butter mixture.
    4.  Stir in the white chocolate chips. Spread the batter in the pan.
    5.  Drop dollops of jam on top and swirl with a knife. Sprinkle on almonds.
    6.  Bake 25 to 30 minutes.
    7.  Let cool before cutting into bars.
